You've probably already heard about Sansei Sushi. They're pretty well known because they offer fresh sushi in a fun atmosphere at a great price.
THE FOOD
If you like Sushi, Maui is the right place to be, and Sansei is the place to be on Maui. They serve traditional sushi as well as creative versions of the classics. Often the recipient of culinary awards, Sansei comes up with fantastic original dishes like their Panko Crusted Ahi Roll. They also serve steak, chicken, and veggie dishes if you don't like raw food. Everything they make is really good and relatively inexpensive.
As you can see from the photos, we have a lot of trouble not eating when the dishes hit the table. After hundreds of visits, we still have yet to remember photos before digging in. Oh well. The photo below is of their Macadamia Nut Tempura Ice Cream.
THE ATMOSPHERE
With 2 locations in Maui, Sansei has a lively and always busy atmosphere. Stick around for Karaoke while eating late night half-priced sushi. If you do this, keep in mind that gratuity will be added regardless. Even though they're typically super busy at all times, the service is usually good.

I love Sansei. They do some great work. I really like their Duck Eggrolls and their Dynamite Shrimp.
